El Salvador - DJ Pacamara

Jaime Guevara is a producer's producer. When we visited, he generously invited us into his home, where fresh bags of coffee parchment double as furniture. His harvests are meticulously separated by varietal & process. A part of his farm is reserved for growing a Salvadorian national treasure, the Pacamara varietal. For this lot, he did an impressive 80 hours in tanks before drying on raised beds.
