Rodrigo Palaez and his team at Laderas Del Tapias have created what we like to credit as our “Flagship Natural Process” coffees. Located in a humid region not known for explosive natural coffees, LDT is the exception to the rule. Like many, they rely on machine drying their coffee to offset the moisture in the air, but their secret? They tend to dry 12 hours on, 12 hours off to mimic the cycle of the sun.
This said, the farm is not a one trick pony. We’ve noted significant improvements in their washed offerings over the last several years. In conjunction with the explosive, boozy natural coffees, this farm is a seemingly a rarity that offers something for every coffee drinker.
