Yinyini's farm is perhaps the most lush we've ever seen. There's hearing about organic growth, and then there's seeing the practice fully implemented. This year's harvest was processed with panela (the purest version of sugar cane) in the fermentation stage, and the results found in the cup are heavy on the sweetness with bright acidity.
